Ingredients

  • 2 cups Flour
  • 1 cup Shortening
  • 4 tsp baking powder
  • 2-3 Eggs
  • 1 tsp Cinnamon
  • 1 ¼ tsp Salt
  • ¼ tsp Nutmeg
  • ¼ Tb Ginger
  • 1 ½ cup Brown sugar
  • ¼ Tb Allspice
  • 1 cup Pumpkin or can
  • 1 cup chopped walnuts nuts (optional) 
Orange Frosting:
  • 3 cups Confectioners’ sugar
  • ¼ cup orange juice
  • 1/3 cup Margarine
  • 1 Tb Orange peel

Directions

Step 1

Pre heat oven to 400

Step 2

Sift together flour, baking powder, salt, spices.

Step 2

Cream shortening and sugar, then add eggs and beat. Blend in pumpkin, then flour, then nuts.  Add dry ingredients and combine to a smooth texture. 

Step 4

Drop by teaspoon onto greased cookie sheet or lined with parchement paper. 

Step 4

Bake for 10–12 minutes. (Might use lower temp, say about 375º)

For the Frosting

Cream all frosting ingredients and frost cookies once they have cooled.
