Ingredients
- 3 TBSP flour
- 2TBSP brown sugar, divided
- ½ tsp salt
- ½ tsp ground cumin
- 1/8 tsp Cayne
- 1 lb pork tenderloin cut on a diagonal into 12 pieces
- 1 TBSP olive oil
- 3 TBSP balsamic vinegar
- ¼ cup orange juice
Directions
Step 1
Combine flour, 1 TBSP sugar, salt and cayenne on a plate. Dredge the pieces of pork in the mixture.
Step 2
Heat olive oil in a large nonstick skillet over medium high heat. Add pork and cook 2-3 minutes on each side or until nearly cooked through. The pork should be light pink in the center. Transfer the medallions to a plate.
Step 3
Pour vinegar, orange juice and remaining 1 TBSP of sugar into the pan. Cook, stirring and scraping up the bits on the bottoms of the pan, about 3 minutes, or until liquid is thickened. Return pork to the skillet, turn medallions once to coat int eh glaze and serve immediately.
