Ingredients

  • 4 Medium chicken breasts boneless
  • 2 Medium tomatoes, cubed
  • 2 Cups fresh mozzarella balls cubed
  • 1 Tablespoon Olive oil
  • 2 Teaspoon balsamic vinegar
  • 1 Clove finely chopped
  • 1 Tablespoon Fresh basil

Directions

Step 1

Preheat oven to 350° lightly spray a baking dish.

Step 2

Toss tomatoes with garlic and basil and set aside.

Step 3

Lightly flatten each chicken breast to ¼” thick.  Evenly place tomatoes and cubed mozzarella on each chicken breast.  Roll up and secure with toothpick.  Should you have a surplus of Tomato and Mozzarella just top chicken.

Step 4

Place chicken breasts into baking dish and drizzle with olive oil and vinegar.

Step 5

Bake for 30 minutes or until chicken is cooked thru.  Remove from oven cover and let rest for 10 minutes.
